I just came across this post while searching for tips on how to cook steak indoors. I bought a pricey grass-fed porterhouse yesterday because I was feeling indulgent (and like you, I'm gonna be cooking it for myself so I can get 2 or 3 meals out of it) and then I realized that I'm kind of terrified of messing it up. But these directions are exactly what I was looking for, and now I'm actually excited about my dinner tonight, so... thanks! Hopefully it will turn out as well as yours!

You are very welcome! I'm happy to hear it turned out so well. Better than the grill - now that's high praise indeed. Thanks for taking time to let me know how it went, and happy steak cooking (and eating)!

Thanks for the great detail and advice on this technique. I had my ribeyes marinating overnight to be cooked this afternoon on the grill. Unfortunately we experienced torrential downpoar today, and I was forced to adjust my plans. I was very skeptical about cooking ribeyes on anything else but a charcoal or mesquite fired grill, but your method is perfect. My ribeyes today were better than any I have ever made on the grill. Thank you very much!
